Delicate steamed dumplings filled with spiced ground beef and onion, served draped in a garlicky yogurt sauce and a tomato-lentil topping. Mantu is a special-occasion dish because of the work involved in folding dozens of dumplings by hand, usually done together as a family.
Make the dough
Mix the flour, egg and salt, then work in the water gradually to form a smooth, firm dough.

Cover the dough and let it rest so it becomes easier to roll thin.
30 minMake the filling
Combine the minced beef with one chopped onion, cumin, coriander, black pepper and salt, mixing well.
Roll and fill the dumplings
Roll the dough out thin and cut into small squares, then place a spoonful of filling in the center of each and fold and pinch the corners together to seal.
Make the tomato-lentil topping
Heat the oil in a pan, fry the second chopped onion until soft, then add the tomatoes and boiled lentils and simmer into a thick sauce.
10 minSteam the mantu
Arrange the dumplings in a lightly oiled steamer basket without touching, and steam over boiling water until the dough turns translucent and the filling is cooked through.
Make the yogurt sauce
Whisk the yogurt with the minced garlic and a pinch of salt until smooth.
Assemble and serve
Spread the garlic yogurt over a serving plate, arrange the steamed mantu on top, spoon over the tomato-lentil topping, and finish with dried mint and chili flakes.
