A tangy, spicy street snack of stewed yellow peas and boiled potato tossed with tamarind water, chopped onion, green chili and a crisp topping, sold from carts across Dhaka at any hour. It's assembled fresh at the moment of serving so the crunch and tang stay bright.
Boil the peas
Drain the soaked yellow split peas, cover with fresh water, add turmeric and salt, and boil until soft but still holding their shape.
Mix in the potato
Add the diced boiled potato to the peas and simmer together for a few minutes so the flavors combine.
5 minSeason the base
Stir in the tamarind water, roasted cumin powder, chaat masala and chili powder, and simmer briefly until the mixture is well seasoned and slightly thickened.
5 minAssemble and top
Spoon the pea mixture into bowls and top with chopped onion, green chilies, coriander leaves, diced boiled egg and crushed papdi.
Serve
Squeeze fresh lemon juice over each bowl and serve immediately while the topping is still crunchy.
