Cook the filling
Cook the onion in the oil until soft, then add the ground beef and cook until browned, seasoning with salt and pepper.

Lay out a phyllo sheet
Lay one phyllo sheet flat and brush it lightly with oil.
Add filling and roll
Spread a thin line of the meat filling along one edge of the sheet, then roll it into a loose log.
Coil the log
Coil the log into a spiral in a round oiled baking pan, and repeat with the remaining sheets, joining each new log to the outer end of the spiral.
Brush the top
Mix the yogurt with a splash of sparkling water and brush it generously over the top of the spiral.
Bake until crisp
Bake until the burek is deep golden and crisp all over.
Rest and slice
Let it rest briefly before slicing into wedges to serve.
