A textural, savoury-bitter salad of fermented tea leaves tossed with fried garlic, split peas, peanuts and sesame seeds. This is the vegetarian version made without dried shrimp or fish sauce — the version with both is just as commonly eaten in Myanmar.
Fry the garlic chips
Fry the sliced garlic in the oil over medium heat for three minutes until golden and crisp, then lift out with a slotted spoon and reserve the garlic oil.
Loosen the tea leaves
Massage the rinsed fermented tea leaves gently with your fingers to loosen the strands and remove any excess bitterness.
Toss the salad
In a large bowl, toss the tea leaves with the fried garlic and reserved garlic oil, fried split peas, peanuts, sesame seeds, tomato and chilli.
Season and serve
Add the tamari and lime juice, toss again, taste, and adjust the balance of salty and sour, then serve over shredded cabbage.
