Flat rice noodles from Myanmar's Shan State, tossed with a mildly spiced pork or chicken sauce, sesame and fermented soybean, served either dry-tossed or in a light tomato broth. A defining dish of the Shan highlands, distinct from lowland Burmese cooking.
Cook the noodles
Boil the flat rice noodles for three minutes until tender, then drain and toss with a little sesame oil to keep them from sticking.
3 minFry the aromatics
Heat the oil in a pan and fry the onion and garlic for three minutes until softened.
3 minBrown the meat
Add the minced pork or chicken, turmeric and paprika, and stir-fry for six minutes until fully cooked and lightly browned.
6 minBuild the sauce
Stir in the tomatoes and fermented soybean paste, and simmer for five minutes until the tomatoes break down into a thick sauce.
Season the sauce
Stir in the fish sauce, taste, and adjust the seasoning.
Toss and serve
Toss the noodles with the meat sauce, or serve the sauce spooned over the noodles, and top with crushed peanuts, pickled mustard greens, spring onion and cilantro.
