Coat the rice in oil
Toss the rinsed rice with the oil in the pot you'll cook it in, and let it sit for ten minutes.
Simmer the congee
Add the stock, ginger slices and chicken thigh to the pot, bring to a boil, then reduce to a gentle simmer, stirring occasionally, for sixty minutes until the rice has broken down into a thick, creamy porridge.
Shred the chicken
Lift out the chicken thigh, let it cool for five minutes, then shred it into bite-size pieces with two forks.
