Sear the beef
Season the beef and sear it on all sides in the oil in a large pot until browned all over.
Add the vegetables
Add the carrots, celeriac, parsnip, onion, allspice and bay leaves around the beef and cook briefly.
Braise slowly
Add the beef stock, cover, and braise gently until the beef is very tender.
Rest the beef
