Egyptian falafel made from split fava beans instead of chickpeas, blended with fresh herbs and coated in sesame seeds before frying — crisp outside, bright green inside.
Soak the fava beans
Cover the split fava beans with plenty of cold water and soak them overnight until softened.
Blend the mixture
Drain the beans and blend them with the onion, garlic, parsley, cilantro, dill, coriander, cumin, salt and pepper into a coarse, sticky paste.
Rest the mixture
Stir in the baking powder and let the mixture rest briefly before shaping.
10 minShape and coat
Shape the mixture into small flat patties and press each one into the sesame seeds to coat.
Fry until golden
Fry the patties in hot oil in batches until deeply golden and crisp on both sides.
Drain and serve
Drain the taameya on paper towels and serve hot, tucked into bread with salad and tahini sauce.
