Simmer the pork
Put the pork, water, tomatoes and onion in a pot, bring to a boil, then simmer for thirty minutes until the pork is tender.
30 minSour the broth
Stir in the tamarind paste and simmer for five minutes until the broth turns pleasantly sour.
Add the firm vegetables
Add the radish and string beans and simmer for eight minutes until just tender.
8 minFinish with greens
Add the kangkong and chillies and simmer for two more minutes until the leaves wilt.
2 minSeason and serve
Season with patis and salt to taste, and serve hot with steamed rice.
