Xacuti (pronounced 'sha-kuti'), a dark, roasted-spice Goan chicken curry built on a masala of dry-roasted whole spices, poppy seeds and coconut, ground fresh for every pot. A Goan Hindu and Catholic favorite for feast days.
Roast the spices
Dry roast the dried chilies, coriander seeds, poppy seeds, sesame seeds, cumin, pepper, cinnamon, cloves, star anise and coconut, one after another, until fragrant.
Grind the masala
Let the roasted spices cool, then grind them with a splash of water into a fine xacuti masala.
3 minSaute the onions
Heat the oil in a pot and fry the onions until golden brown.
8 minAdd garlic and ginger
Stir in the garlic and ginger and cook briefly until fragrant.
2 minCook the masala
Add the ground xacuti masala and turmeric and cook until the mixture darkens and the oil separates.
6 minSear the chicken
Add the chicken and sear it, turning to coat evenly in the masala.
5 minSimmer until cooked
Add the water, tamarind and salt, cover, and simmer until the chicken is fully cooked through.
