Brown the beef
Brown the beef cubes in the lard in a large pot in batches, then set aside.
Soften the onion
Cook the onion in the same pot until soft and golden.
Bloom the paprika
Off the heat, stir in the paprika, caraway and garlic and let them bloom for a few seconds in the residual warmth.
Return the beef and simmer
Return the beef to the pot, add the beef stock, and bring to a simmer.

Cover and simmer gently until the beef is almost fully tender.
75 minAdd the vegetables
Add the carrots, parsnip, pepper and potatoes and continue simmering until everything is tender.
25 minSeason and serve
Season with salt and pepper and serve hot with crusty bread.
