Deep-fried dumplings of grated paneer and potato served in a rich, creamy cashew-tomato gravy. A festive North Indian restaurant favourite, milder and sweeter than most paneer curries.
Make the kofta dough
Mix the grated paneer, mashed potato, cornflour and salt into a smooth dough that holds together.
Shape and stuff the koftas
Take small portions of the dough, flatten each into a disc, place a few raisins and chopped cashews in the centre, and roll into a smooth ball.
Fry the koftas
Heat the oil and deep-fry the koftas in batches on medium heat until golden brown all over.
Blend the gravy base
Blend the soaked cashews with the chopped tomatoes into a smooth paste.
Fry onions and ginger-garlic
Heat the ghee in a pan, add the chopped onion and fry until golden, then stir in the ginger-garlic paste.
6 minCook the gravy
Add the cashew-tomato paste and chilli powder to the pan, and simmer until the gravy thickens and turns a deep orange-red.
10 minFinish the gravy
Stir in the garam masala, sugar, salt and cream, and simmer gently for a few more minutes.
3 minAssemble and serve
Place the fried koftas in a serving dish and pour the hot gravy over them just before serving, so they stay crisp until the last moment.
