Build the ragu base
Cook the onion, carrot and celery in the pancetta fat over medium-low heat until softened.

Add the beef and pork and the diced pancetta, browning until no pink remains.

Pour in the white wine and simmer until it has nearly evaporated.
5 minSimmer the ragu
Stir in the tomatoes and the first measure of milk, then simmer uncovered on low heat for two and a half hours until thick and deep in flavor.
Make the roux
In a separate pan, melt the butter and whisk in the flour, cooking for two minutes until it smells toasty.
2 minWhisk in the milk
Gradually whisk in the second measure of warm milk, cooking until the béchamel thickens into a smooth, pourable sauce.
Layer the lasagne
In a baking dish, layer pasta sheets, ragù and béchamel, repeating to build at least five layers, finishing with béchamel and grated Parmigiano Reggiano on top.
Bake until golden
Bake in a preheated oven at 190 degrees Celsius until the top is golden and bubbling.

Let the lasagne rest for fifteen minutes out of the oven so the layers set before slicing.
