Fry the plantain
Fry the plantain slices in the oil, turning once, until golden brown on both sides.

Lift the fried plantain onto paper towels to drain.
Make the sauce
In a little of the frying oil, cook the onion, garlic, tomatoes and scotch bonnet pepper together until softened into a chunky sauce.

Toss the fried plantain with the tomato-onion sauce, or spoon the sauce over the top.
Serve
Serve warm as a snack or side, with grilled fish or a boiled egg if you like.
