Bring the broth to a boil
Combine the dashi, soy sauce, mirin, sake, and sugar in a wide pan and bring it to a boil.
3 minSoften the onion
Add the sliced onion to the broth and simmer until it turns translucent.
5 minAdd the beef
Lay the beef slices into the simmering broth, separating them with chopsticks, and cook until just done.
3 minLet it rest
Turn off the heat and let the beef sit in the broth for a couple of minutes so it soaks up the flavor.
2 minServe over rice
Mound rice into bowls, ladle the beef, onion, and broth over the top, and garnish with pickled ginger.
