A fragrant Libyan lamb and tomato soup thickened with orzo-like pasta and finished with a squeeze of lemon and fresh mint — the traditional dish for breaking the Ramadan fast.
Brown the lamb
Heat the olive oil in a pot and brown the lamb pieces with the onion and garlic.
Build the base
Stir in the tomato paste, caraway, turmeric and dried mint and cook briefly.
Simmer the soup
Add the water, cover, and simmer until the lamb is tender.

Stir in the orzo and simmer until it's cooked through.
10 minFinish and serve
Stir in the lemon juice, season with salt and pepper, scatter over fresh mint, and serve hot.
