Season the pork
Season the pork chunks all over with salt, cumin and oregano.
Melt the lard
Melt the lard in a large, heavy pot over medium heat.

Add the pork, orange juice and zest, milk, garlic, bay leaves and cinnamon stick to the melted lard.
Simmer until tender
Bring to a bare simmer and cook gently, uncovered, until the pork is completely fork-tender.
Fry until crisp
Raise the heat and fry the pieces in the rendered fat, turning occasionally, until deeply golden and crisp outside.

Lift the pork out and roughly shred or chop it, discarding the bay leaves and cinnamon stick.
Warm the tortillas
Warm the corn tortillas on a hot pan or comal.
