A hearty tomato soup of lentils, chickpeas and vermicelli scented with cinnamon and ginger, eaten every evening during Ramadan to break the fast.
Soak the chickpeas
If using dried chickpeas, soak them in plenty of cold water overnight.
Cook the aromatics
Heat the olive oil in a large pot and cook the onion and garlic until soft.
Build the base
Stir in the tomato paste, grated tomatoes, ginger, cinnamon and turmeric and cook for a couple of minutes.
Simmer the lentils and chickpeas
Add the lentils, chickpeas and water, then cover and simmer until both are tender.
Add the vermicelli
Stir in the vermicelli and simmer until just tender.
5 minThicken the soup
Whisk the flour paste into the soup and simmer, stirring, until it thickens slightly.

Season with salt and pepper, stir in the chopped herbs, and serve hot with lemon wedges and dates.
