A tangy, spicy puffed rice snack sold from carts on Nepali streets, tossed together with boiled potato, chickpeas, onion, chilli and a sour tamarind-lemon dressing right in front of you.
Boil the potato and chickpeas
Boil the potato and chickpeas separately until tender, then drain and cool.
10 minMake the tangy base
In a large bowl, mix the tamarind pulp, lemon juice, chatpate masala and salt into a runny dressing.
Add the vegetables
Add the boiled potato, chickpeas, onion, tomato and green chilli to the dressing and toss well.
Fold in the puffed rice
Add the puffed rice just before serving and toss everything together quickly.
Garnish and serve
Scatter over the coriander and serve immediately in a bowl or paper cone, eaten with a small flat spoon.
