A soup of nine sprouted beans and legumes, traditionally cooked for the Janai Purnima festival in August, believed to be nourishing enough to sustain a full day of fasting and ritual.
Soak the beans
Rinse all the beans together and soak them in plenty of water.
Sprout the beans
Drain the beans, wrap them loosely in a damp cloth, and leave them in a warm dark place to begin sprouting.
Temper the spices
Heat the mustard oil in a large pot, add the jimbu, cumin seeds, garlic and ginger, and fry until fragrant.
1 minAdd the sprouted beans
Tip in the sprouted beans with the turmeric, stir to coat, and pour in enough water to cover generously.
1 minSimmer until tender
Bring to a boil, then simmer on low heat, topping up water as needed, until every bean is soft.
Season and serve
Add salt to taste and serve the soup hot in bowls, on its own or with rice.
