Slice the plantains
Peel the ripe plantains and slice them diagonally into pieces about as thick as a finger.
Heat the oil
Heat the oil in a frying pan until it shimmers.
Fry until golden
Fry the plantain slices in batches, turning once, until golden brown on both sides.
Drain
Lift the fried plantain onto paper towels to drain the excess oil.
Season and serve
Sprinkle lightly with salt and chili powder if using, and serve hot.
