Peru's Chinese-Peruvian fried rice, born in Lima's chifa restaurants: day-old rice fried hot with egg, scallion, chicken and soy sauce, finished with a splash of sesame oil.
Scramble the eggs
Heat a little oil in a hot wok and scramble the beaten eggs quickly, then set them aside in pieces.
2 minFry the aromatics
Add the rest of the oil to the wok and fry the garlic, scallion whites and bell pepper over high heat until fragrant.
2 minAdd chicken and rice
Add the diced chicken and cold rice, breaking up any clumps, and stir-fry over high heat until the rice is hot and starting to crisp.
Season the rice
Drizzle in the soy sauce and sesame oil and toss everything until the rice is evenly colored.

Return the scrambled egg to the wok along with the scallion greens and toss briefly to combine.

Taste for salt and serve the fried rice immediately while it is hot and fragrant.
