Douse in vinegar
Douse the beef strips in vinegar, making sure every surface is coated.

Mix the salt, crushed coriander, pepper and sugar, then rub this all over the vinegar-soaked strips.
Cure in the fridge
Layer the coated strips in a container and cure them in the fridge, turning once partway through.
Hang to dry
Shake off excess spice, hook each strip, and hang the strips in a cool, dry, well-ventilated spot away from direct sun.
Slice and store
Once fully dried and firm, slice thinly against or along the grain as you prefer, and store in a paper bag in a cool place.
