A fiery, tangy Kerala fish curry souring with kudampuli, the black Malabar tamarind unique to the region, cooked in coconut oil with shallots and curry leaves. Traditionally made in a clay pot and eaten with rice.
Soak the kudampuli
Soak the kudampuli pieces in warm water to soften.
20 minMarinate the fish
Rub the fish steaks with turmeric and salt and set aside to marinate.
10 minTemper the spices
Heat the coconut oil in a clay pot or heavy pan and add mustard seeds, fenugreek, dried red chilies and curry leaves, and let them sizzle.
1 minSaute the aromatics
Add the shallots, ginger and garlic, and saute until softened and lightly golden.
4 minCook the spice powders
Stir in the chili powder, turmeric and coriander powder and cook briefly until fragrant.
Add the tamarind
Add the kudampuli with its soaking water and bring the curry to a simmer.
5 minSimmer the fish
Slide the fish into the curry, cover, and simmer gently without stirring hard so the pieces stay whole.
Rest before serving
Take the curry off the heat and let it rest so the flavors settle before serving with rice.
