A thin, peppery, tamarind-and-tomato soup from Tamil Nadu, spiked with rasam powder and finished with a ghee tempering. Sipped on its own or poured over rice at the end of a meal.
Simmer the base
Combine the tamarind pulp, tomatoes, mashed dal, rasam powder, turmeric, garlic, salt and water in a pot and bring to a gentle simmer.
Temper the spices
In a small pan, heat the ghee and add mustard seeds, cumin, dried red chili, curry leaves and asafoetida, and let them sizzle.
