Brown the onions
Cook the sliced onions in the oil over medium-high heat until deeply browned.
10 minBrown the beef
Add the beef chunks and brown them on all sides.
5 minAdd whole spices
Stir in the cloves, cinnamon, cardamom, garlic, ginger and pilau masala, and cook until fragrant.
2 minSimmer the beef
Add half the stock, cover, and simmer until the beef is tender.
40 minAdd the rice
Stir in the rinsed rice and the remaining stock, and bring to a boil.
Cook the rice
Reduce to a low simmer, cover tightly, and cook until the rice is tender and the liquid is absorbed.
Rest and serve
Let the pilau rest off the heat before fluffing gently and serving.
