Simmer the aromatics
Bring the stock to a gentle boil with the lemongrass, galangal and half the kaffir lime leaves, and simmer for ten minutes to infuse.
10 minAdd coconut milk and chicken
Pour in the coconut milk, bring back to a gentle simmer, then add the chicken slices and cook for six minutes until just cooked through.
Add mushrooms and chilli
Stir in the mushrooms, bruised chillies and remaining kaffir lime leaves, and simmer for three more minutes.
3 minSeason off the heat
Remove the pot from the heat and stir in the fish sauce and lime juice, tasting for a balance of salty, sour and creamy.
Serve
Ladle into bowls, scatter with cilantro, and serve with steamed jasmine rice.
