A hearty noodle soup with chicken and vegetables in a well-spiced broth, brought to Nepal by Tibetan refugee communities and now a beloved cold-weather dish in Kathmandu and the hills.
Boil the noodles
Cook the wheat noodles in a separate pot of boiling water until just tender, then drain and set aside.
8 minSear the chicken
Heat the oil in a large pot, add the chicken and stir-fry until it turns opaque and lightly browned.
5 minFry the aromatics
Add the garlic, ginger and onion to the pot and fry until the onion softens.
3 minAdd the vegetables
Stir in the cabbage and carrot and cook briefly until they start to soften.
2 minSimmer the broth
Pour in the chicken stock and soy sauce, bring to a boil, then simmer until the chicken is fully cooked and the broth tastes rich.
Combine and serve
Divide the cooked noodles into bowls, ladle the hot soup and chicken over the top, and garnish with spring onion.
