Chicken or beef stewed with groundnut sauce and steamed inside a parcel of banana leaves, a dish once reserved for Baganda royalty and now served at Ugandan weddings and celebrations.
Soften the banana leaves
Pass each banana leaf briefly over an open flame or hot pan until pliable.
Brown the chicken
Cook the chicken pieces in the oil with the onion, tomato and garlic until lightly browned.

Stir the ground groundnut paste into the water until smooth, then pour it over the chicken and stir to coat.
Simmer briefly
Simmer the chicken in the sauce until it starts to thicken slightly.
10 minWrap the parcels
Divide the chicken and sauce among the softened banana leaves and fold each into a tight parcel, tying with string or a strip of leaf.
Steam the parcels
Place the parcels in a large pot over simmering water, cover, and steam until the chicken is fully tender.
Season and serve
Unwrap the parcels at the table, season with salt to taste, and serve with matoke or rice.
