Mix the flour, water, salt and oil into a firm, smooth dough.

Cover the dough and let it rest.

Mix the chopped lamb with the diced onion, cumin, salt and pepper.
Roll and cut
Divide the dough, roll each piece thin, and cut into squares.
Fill and seal
Spoon filling onto each square, fold into a triangle or envelope, and seal the edges well.
Brush and top
Brush the tops with egg wash and sprinkle with sesame or nigella seeds.
Bake until golden
Bake in a hot oven until deep golden and crisp.
