Strong dark-roast coffee dripped through a small metal phin filter directly over sweetened condensed milk, then poured over ice. An everyday ritual across Vietnam, from street stalls to home kitchens.
Set up the phin filter
Spoon the condensed milk into a glass, and set a Vietnamese phin filter with the ground coffee on top of the glass.
Bloom the coffee
Pour a small splash of hot water over the grounds to wet them evenly and let it sit for thirty seconds before pressing the filter disc down gently.

Fill the phin with the rest of the hot water and let it drip slowly through into the glass over about five minutes.
Stir and pour over ice
Remove the phin, stir the coffee into the condensed milk until fully combined, then pour the mixture over a glass full of ice.
